Go slowly with those New Year’s resolutions, nutritionist says

Broccoli rice pilaf with chicken or leftover turkey

1 small onion ($0.36)
1 cup uncooked instant brown rice ($1.68)
1 clove of garlic ($0.28)
1 bag of frozen chopped broccoli, thawed ($0.98)
1 cup of chicken broth ($0.57)
Tablespoon of oil
Can of chicken – 12.5 oz. ($2.08)
Or use leftover turkey
1. In a frying pan add oil and let it heat up, add onion, cook until clear this takes about 3 minutes.
2. Stir in rice, chicken/turkey, garlic, and cook, stirring frequently for about 1 minute.
3. Stir in broccoli and broth.
4. Bring to a boil over a high heat.
5. Reduce heat to medium and cook covered, stirring occasionally, until rice is tender, and liquid is absorbed.
NOTE: If you do not have chicken broth, precook rice and add rice and broccoli at the same time. Cook until broccoli is done.
If you do not have the ingredients, the meal will cost about $6.67 plus tax. If using leftover turkey and buying the remaining ingredients the meal will cost about $4.59 plus tax.
