Honey Mustard Vinaigrette

¼ c vinegar of your choice
1-2 T freshly-squeezed lemon, lime, or orange juice
1 T honey
1-2 garlic cloves, minced or pressed
1 T prepared mustard or 1 tsp powdered mustard
Salt and pepper to taste
1 C extra virgin olive oil, preferable unfiltered
Top with your choice of sunflower, pumpkin, or flax seed to add a touch of protein.
Combine all ingredients except the oil and mix with a wire whisk or for ten seconds in a food processor. Continue mixing as you gradually drizzle in the oil. Store in the refrigerator for up to two weeks. Bring to room temperature before using.
