Bison Roast

To avoid heating up your kitchen, a crock pot is recommended for this slow-cooking dish.
Choose
A roast such as chuck, round, sirloin tip or tri-tip. Cheaper cuts benefit from low and slow heat.
Mix
½ Cup chopped onion
2 Tbsp. chili powder
1 tsp. oregano
½ tsp. cumin
1-3 cloves minced garlic
salt and pepper to taste
Optional: 1 Cup green chiles, fresh, frozen or canned
Rub
The above ingredients into the roast, coating it on all sides.
Add
1 -1 ½ Cup hot beef broth to the crock pot. How much hot liquid you add will depend on the size of your roast and how wet you want it to be when it is finished.
Cook
On a low setting for 8 to 12 hours if using a crock pot. If using the oven, set it at 275 degrees. Internal temperature of the meat when cooked should be between 145 degrees (medium rare) to 160 degrees (medium). The meat should be fork tender.
Shred
The meat and use in your favorite recipe.
